BRAN MUFFINS (Low Calorie)
1 c. unprocessed Bran
1 c. skim milk
1 c. whole wheat flour (I used regular all-purpose because that's all I had on hand.)
2 1/2 tsp. baking powder
1/2 tsp. salt
1/4 c. vegetable oil
1 lg. egg
1/2 c. sugar
Mix Bran and milk in small bowl (set aside). Grease 12 (2 1/2 inch) muffin cups. Mix flour, baking powder and salt in medium bowl. Beat egg, oil and sugar into soaked bran. Pour into flour mixture. (Mix, and add fruit/seeds/nuts.) Fill greased muffin cups 3/4 full and bake 20-25 minutes (mine took 30) at 400°F (200°C) degrees. These keep and freeze well.
I added 1 banana (sliced thin), and some linseeds (1-1/2 Tbsp maybe?). They smell divine. And taste effing great too! They should be somewhere around 95 cal each, I think.
