While in VA we picked up a canister of peppermint "Drinking Chocolate" from Target (post Xmas sale!). It was a pain in the ass to prepare, what with the mixing and melting and mixing and melting instructions, but it tasted really good. So, I got an idea. I decided to make peppermint chocolate chocolate chip cookies with it.
Yes. Peppermint chocolate chocolate chip cookies. I grabbed a chocolate chocolate chip cookie recipe and reduced the sugar and the baking cocoa, and substituted "Pfefferminz Likor" (peppermint liquor) for the vanilla. I will tell you now, the cookie dough was divine. Waiting on them to come out of the oven now. They smell delicious.
EDIT: I'm glad pretty isn't a prerequisite for food in our household. The cookies all melted together forming two solid cookie sheets of chocolate substance. I had to take a pizza cutter to it to get it to where I could scoop it out with a spatula. They aren't really solid, not really liquid either. They taste great though. I'm thinking next time, if there is a next time, I'll try peppermint chocolate chocolate chip brownies instead.
