I made Dawn’s Harvest Pork Roast in the slow cooker, and served it with carrots and Golden Sweet Cornbread.

The pork came out quite good, I was skeptical of serving it with some of the apples and cranberries but it was surprisingly good with them! And the cornbread. Oh. My. God. The Cornbread. Better than good. Usually I can take or leave cornbread but this recipe* ROCKS. I had 2 and a half servings of it. Sooo full.



*The substitutions I made for the cornbread were minimal, lactose free skim milk for the milk and Splenda for the sugar just to reduce calories by 520.

Some of y'all know that I go through these phases where I desperately want comfort food. I've hit one of those today and I have a couple of really good EASY recipes to share! :-D You know, just in case anybody else wants some chicken and gravy with fresh biscuits.

The E-Z Drop Biscuits* are 157 calories a piece and you can whip them up in no time flat. They really hit the spot when you are craving biscuit-y goodness.

What will take quite a bit longer is the chicken and gravy. Prep time is super quick, haul out the crock-pot and toss in about 2 lbs of boneless skinless chicken breasts. Rip open a package of dry Italian dressing mix and sprinkle it over the chicken. Pour in about 2 cups of chicken stock (warm water with chicken bouillon will do!) . Then turn it on low for 8-10 hours. (Super Easy Chicken, Fix-It and Forget-It Lightly - 160 cals per serving)

When it's done pull out the chicken and whisk in enough flour to thicken up the stock and juices into gravy. (One serving of gravy is 40 cals, but I usually use twice that, because GRAVY.)

I like to cut my chicken up and drown it in gravy, and then dip the biscuit in. Very filling! :-D

*American biscuits - NOT BRITISH. Despite having 2 tsp of sugar these are not sweets!

And! I'll be making Chicken Pot Pie for dinner tonight. If it's good I'll share the recipe. It's my first time making a pot pie so I have no idea how it's going to turn out.

EDIT: And here's that recipe! So good. I added a little bit of celery and I used white mushrooms instead of cremini, but it's pretty much the same. I'll be making this one again. Definitely.

Aside from the cooking, I've gotten quite a bit done today. I wanted to do more but I think I'm just done for today. Dishes *were* done, now I have to wash all that I used while cooking. Cleared and wiped down the counters. I folded and put away the laundry, cleared off the couch. I had wanted to sweep and vacuum and all today too but ... even though the floors desperately need it I lack the motivation.

Made a new recipe tonight, Hamburger Buddy. It's quite good actually! I may put it on my list of things to make in March.

I've cleaned house a bit today, or I really should say I cleaned the kitchen. And then cooked. So the kitchen is back to being in need of a cleaning. I need to clean the living room, I may get to that tomorrow.
